Caries-causing bacteria accumulate on the surface of the tooth, especially in cavities and fissures, on the surface of the gums, on bridges, and in plaque caused by food and elsewhere. The main raw material of this bacterium is carbohydrates, especially easily processed sugars. As a result of the bacteria breaking down the carbohydrates in food plaque, acid is released as an end product. As a result of long-term exposure, the acid breaks down the calcium and phosphates in the tooth structure, and a tooth cavity forms.
